Retrieving the original ingredients of the peasant salad

Culinary workshop in the Weekly Market of Sant Josep de Sa Talaia

This Saturday, August 31 at the Sabors d'Eivissa workshops of the weekly Market of Sant Josep de Sa Talaia, it was the turn of the Pagesa salad, the most refreshing dish of Ibizan cuisine and a classic. And we have done so by recovering the original ingredients: the traditional varieties of white pebrera (pepper), ceba vermella (onion) and red potato of the Desirée variety, together with tomato. And we have not only recovered the authentic flavor but we have recovered its original name, and that is that "payesa salad" was the term with which it was referred to in the letters of the city. In the field, the original Catalan term was "potato enciam", with which an "enciam" was indicated, that is to say a salad based on onion, pepper and sliced tomato to which boiled potato was added. In the workshop the traditional varieties and the secrets of their preparation were shown, since although it is a simple dish it is important to keep in mind that the potato should be boiled with skin and the pepper and the potato are not broken with a knife.
